I believe that you are supposed to use the thermodynamic equations. Set up a calorimetry experiement with the ice a coffee, using the insulated cup as a primitive calorimiter. The equation will be:
heat of ice = heat abosorbed by coffee + heat absorbed by cup
OR
(mass of ice)(specific heat of ice)(final temperature of ice - intial temperature of ice) = (mass of cup)(specific heat of cup)(final temperature of cup - initial temperature of cup) + (mass of coffee)(specific heat of coffee)(final temperature of coffee - initial temperature of coffee)

Note that the final temperature value for all three objects will be the same (the temperature after the ice completely melts in the hot coffee). Remember that when you add the ice to the coffee, keep the top closed so heat cannot escape. Poke a small hole in the top for a thermometer to be placed inside. Hope this helps.
